Neapolitan cooking is a world unto itself. Simple and always fresh, pizza and pasta were invented here. The open markets everywhere sell fresh fish. What’s more, the vegetables and fruits grow here in abundance thanks to the fertile soil. I recommend the book Naples At Table by Arthur Schwartz for a comprehensive guide through Neapolitan cooking. If you read Italian, Il Cuoco Galante can be found at any Italian bookstore and is worth the read: Vincenzo Corrado was the celebrated gastronome of the Enlightenment period who cooked for royalty here in Naples.
